Enche Kebin (Broth Chicken)

Easy to make Enche Kebin (broth chicken) with potatoes, carrots, grater ginger and Bombay onion, along with seasonings.

Ingredients:

1 pound chicken
2 ounce snowpeas
2 potatoes, sliced
2 carrots, sliced
2 tbsps soy sauce
1 Bombay onion, sliced
1 tbsp water of grater ginger
1¼ chicken stock
½ tbsp caltrop starch, mix with 1 tbsp of water
Dash of oil, salt and pepper

Directions:

  1. Divide chicken into some pieces, combine with salt and pepper. Fry chicken and potatoes until cooked, set aside. Boil carrots, pat dry.
  2. Saute fried chicken with Bombay onion, then add soy sauce, water of ginger and chicken stock, stir well. Add carrots, fried potatoes and snowpeas. Pour in dash of salt and pepper.
  3. Thicken broth chicken with caltrop starch. Stir well. Remove. Serve.
