Rica-rica* Chicken

*Rica-rica : a Manadonese (Indonesia) specialty prepared with pepper, onion, etc.
Ingredients:
2¼ pounds chicken, divide into 16 pieces
8 sprigs spring onion, minced
½ cup water
Dash of sugar
Dash of salt
Dash of peppercorn powder
Seasoning:
6 cloves garlic
6 cloves onion
6 red pepper
6 chili pepper
Dash of pepper

Directions:
  1. Combine chicken with salt and seasoning, mix well. Refrigerate for 15 minutes. Fry chicken until lightly brown.
  2. Crush the above seasoning, saute until fragrant.
    Place the fried chicken on dip wok. Add sugar, salt and seasoning. Then pour in water, allow to soaked.
  3. Before the chicken is done sprinkle with sprigs spring onion. Rica-rica chicken ready to be served.
Yield 4 servings
